Flavor : Floral with hints of mint and rosemary

Preparation Ideas : How to Dry Lavender: Before the buds open, cut the lavender at the base of the stems. Try to get the longest stem on the flower possible. Leave the leaves and stem in place so the plant can finish growing. Gather the lavender stems into a bouquet and cut the bottom of the bouquet so the ends are even. Tie the stems with an elastic band. It is recommended to limit the bundles to 3/4" in diameter or less to allow for even drying and to prevent mold growth. Continue wrapping the elastic around the bundle so the stems are secure, but not crushed. Hang lavender bouquets upside down in a dark place for 2 to 4 weeks. Lavender is dry when you brush the flowers, which will easily fall off the stems. Dried flowers can be used in baking or put in sachets and placed in clothes cupboards for a sweet lavender scent.

Seed Type : Heirloom

Latin name : Lavandula angustifolia

Start indoors 8-10 weeks before the last frost.

Sowing depth: 3 mm (1/8")

Space between plants: 25 cm (10")

Space between rows: 25 cm (10")

For best germination, fold a damp paper towel around the seeds and place them in an airtight plastic bag. Place them in the freezer for 2 to 4 weeks, then remove them and let them come to room temperature before opening the bag and planting them. Cut the flowers when they have just opened and the scent is strongest. Dry on a screen in the shade. Excellent for floral arrangements.
